Small thick octavo, colour plates (some folding) and many illustrations throughout the text; a very good copy in the original red cloth, rebacked retaining original spine, all edges gilt.
The "New Edition" of the 19th century domestic classic. This edition was entirely revised in 1888 to include, the preface states, "American and Colonial Dishes. In the recipes for the latter will be found some foods not yet introduced here, as, for instance, the Australian wallaby and parrots".
In fact this edition has an entire chapter on Australian cooking, including "General Observations on Australian Cookery", and recipes for ten "Australian" dishes including roast wallaby, parrot pie, curried kangaroo tails and fricasseed kangaroo tails, all of which are illustrated. There is also an illustration of the "Australian Kitchen".
